Time/temperature control for safety (TCS) food supports rapid pathogen growth or toxin formation when it sits too long in the temperature danger zone (TDZ). Under FDA Food Code 2022, that zone is 41°F to 135°F (5°C to 57°C). Older posters and some retired courses still say 40°F to 140°F. That range is not current. If an exam option offers 40–140 and 41–135, take 41°F–135°F.

Cold holding is 41°F or below. Hot holding is 135°F or above. Food in between is in the TDZ. Most rapid bacterial growth happens at roughly 70°F–125°F — the band that includes a steam table that never quite recovers, a pot cooling on a counter, and chili sitting at 120°F.

Time in the Danger Zone Is Cumulative

Bacteria do not reset the clock because the food changed rooms. Minutes at receiving on a warm dock, plus prep on the table, plus a slow steam-table recovery, plus a long cool-down all add together. Teach staff that TCS food should not stay in the TDZ longer than necessary. Every extra trip, every uncovered hotel pan on a speed rack, and every "it will only be a minute" extends the same clock.

That is why thermometer checks belong at more than the cook step:

A cook who says leftover soup can linger in the TDZ for four hours "because of the four-hour rule" is mixing two different controls. Time as a public health control is a planned, labeled, written alternative used when you are not holding at 41°F or 135°F. Refrigeration at 0°F–41°F is an operational target so food stays at the legal 41°F cold-hold limit. Freezers are often set near 0°F or below so product remains frozen solid. Do not invent a Food Code "required freezer air temperature" that matches the 41°F cold-hold number. The Code's freezer expectation is that frozen foods remain frozen, not that every box of air in every freezer reads one official degree.

Chili on the Steam Table at 120°F

Lunch chili has been sitting on a steam table at 120°F. The insert looks hot. Guests are still being served. 120°F is inside the 41°F–135°F danger zone and inside the rapid-growth band. It is not hot holding. The PIC does not leave it because "it is warmer than cold food." The PIC does not add ice to the steam table and keep serving. The PIC removes that pan from hot holding, stops using 120°F as a holding temperature, and then applies the later time and reheating rules: if the cumulative time in the TDZ is unknown or already excessive, discard; if a documented time window and a legal reheat path still exist, those later chapters govern the next move. The exam point in this section is the temperature diagnosis: 120°F is danger-zone abuse, not hot holding.

Receiving Through Holding, One Product

A case of chili arrives cold, sits on a warm dock, is refrigerated, is reheated for the steam table, and is then held. Each stop needs a thermometer. If receiving already put the product at 50°F for an hour, storage at 43°F overnight added more TDZ time, and the steam table then sat at 120°F, you are not looking at three unrelated events. You are looking at one cumulative clock. That is why "it was only on the table for 30 minutes" is not an answer if you cannot account for the hours before that 30 minutes.
