Warewashing is how dirty plates become food-contact surfaces again. The method is either a 3-compartment sink or a dish machine that actually meets its data plate. Both methods use the same logic: scrape, wash, rinse, sanitize, air-dry. FDA Food Code 4-501.19 sets the manual wash water at not less than 110°F (43°C). 4-703.11 sets the sanitize methods. 4-901.11 requires air-drying. A towel that just dried a plate is a contamination tool, not a polish step.

Scrape First

Food left on a plate becomes wash-water soil. Soil uses up detergent, hides surfaces from sanitizer, and turns the first compartment into soup. Scrape, dump, or pre-rinse into a garbage bowl or disposal before the item enters the wash water. Burned-on pans soak in the wash compartment or in a designated soak sink — they do not sit in the sanitize compartment "to loosen." The third compartment is for a clean item that needs contact time, not for yesterday's lasagna.

3-Compartment Sink Order

Set the sink up before the first pan hits the water. Clean and sanitize the sink compartments themselves. Fill them for the job they will do. Then, after scraping:

  1. Wash in detergent water at least 110°F. Detergent lifts soil. Water below 110°F is a Food Code fail even if the bubbles look busy. Change the wash water when it is greasy or cool. A thermometer in the wash compartment is not optional theater.
  2. Rinse in clean water. Rinse removes detergent and loosened soil so the sanitizer is not neutralized. A rinse compartment full of wash-water foam is not a rinse. Change it. Do not skip rinse because the wash "looked clean."
  3. Sanitize with a chemical solution at the labeled or Food Code concentration and contact time, or with hot water at 171°F for 30 seconds of immersion. Items must be fully submerged. A quick dip that leaves the handle dry is not contact time.
  4. Air-dry. Rack so air reaches all surfaces. Do not towel-dry food-contact surfaces. Do not stack wet plates so the interior stays wet and the sanitizer is wiped onto the next plate's food side.

The drainboard after the third compartment is clean storage in progress. It is not a landing zone for dirty bus tubs.

Sinks Are Not a Combo Station

Do not wash food and utensils in the same sink unless the sink is cleaned and sanitized between those uses. A prep cook who thaws chicken in the wash compartment and then runs knives through the same basin without a sink clean-and-sanitize has contaminated the warewashing setup. Handwashing does not belong in a warewashing sink. Mop water does not belong in a warewashing sink. Each of those jobs has its own fixture. When the 3-comp is the only sink in a tiny operation, the PIC still has to clean and sanitize it between incompatible uses — and the exam still treats "we washed lettuce and then the plates in the same water" as a fail.

Dishmachines

A dish machine is a mechanical 3-comp. It is legal only when it runs the way its NSF data plate says it must run. The plate lists wash temperature, rinse or sanitizer settings, and conveyor or cycle requirements. Staff who never look at the plate cannot know whether today's cycle counted.

Scrape and rack correctly. Heavy soil still gets scraped. Overlap plates so spray arms hit food-contact surfaces, not the back of the next plate. Nested cups and bowl-in-bowl stacks create dry shadows where wash water and sanitizer never arrive. Utensils point down or follow the rack design so they do not cup dirty water. Spray arms must spin; a lime-locked arm is a mechanical fail even if the gauge reads hot.

Chemical machines inject sanitizer in the final rinse. Verify with test strips matched to that sanitizer, on a surface or in the rinse as the manufacturer directs — not by trusting the empty jug on the floor. An empty or clogged supply line produces washed, unrinsed-looking plates that are not sanitized.

High-temp machines sanitize with heat. Confirm with a maximum-registering thermometer or irreversible thermal labels on a utensil that travels the full cycle. Common teaching numbers are 180°F at the manifold and 160°F at the plate. The data plate wins if it states a different legal spec. A gauge that reads 180°F while labels on the plate stay below 160°F means the machine is not sanitizing.

Air-dry coming out of the machine the same way as the 3-comp. Do not towel-polish spots. Delime when scale appears; scale is both a heat-transfer problem and a soil harbor.

When the Machine Fails

If wash water is cold, the sanitizer strip is blank, the final rinse is below the plate, the booster is down, or the arms do not turn, stop using the machine for ware that must be sanitized. Set up the 3-compartment sink and finish legally, or stop that part of service. Do not keep sending racks through "so we stay caught up" and do not pour bleach into the wash tank as a homemade fix. A failed machine plus a chemical dump is two violations.

Saturday Night, Booster Down

The high-temp machine's booster heater dies at 7:40 p.m. Plates exit at 130°F. The PIC does not "run them twice." Twice at 130°F is still not 160°F at the plate. The 3-comp is set: 110°F wash, clean rinse, chlorine at 50–99 ppm with 7-second contact (or 171°F water if the sink can hold it), then air-dry. If the 3-comp cannot keep up, the PIC cuts the menu to what clean, sanitized ware can support. Dirty plates are not an option the certificate allows.

Exam Traps

The first trap is reversing compartments: sanitize first, or wash in sanitizer. Order is wash ≥ 110°F, rinse, sanitize, air-dry. The second is towel-drying "so they can go back on the line." 4-901.11 is air-dry. The third is treating the data-plate temperature as optional if the plates look shiny. The fourth is washing produce and pans in the same uncleaned sink. The fifth is running a dead machine because the dining room is full. The exam answer is a set-up sink or a stop, not a hope cycle.
