Once food leaves the cooler, three other storage problems dominate CFPM exams: a hot, damp, pest-friendly dry room; a freezer that thaws and gets restuffed; and chemicals stored over food. Each one is a contamination or time-temperature failure the PIC can see on a walk-through.

Dry Storage

Dry storage is clean, dry, and well ventilated. ServSafe and most CFPM courses teach an operational target of about 50°F–70°F. That range is not a Food Code hard number the way 41°F is for cold holding. If the exam asks for the Food Code description, answer cool, dry, and well ventilated. If it asks for typical operational practice, 50°F–70°F is the industry teaching band. A 90°F closet next to the dish machine is not dry storage. Heat and humidity cake powders, rust cans, and invite pests.

Keep product at least 6 inches off the floor and away from walls so air can move and so staff can clean and inspect for pests. Use FIFO: new cases behind or under older cases; oldest dated product used first. Keep the room pest-proof — sealed packages, closed doors, no spilled flour on the floor, no cardboard nests in a dark corner. Open bags of sugar, flour, or rice go into clean, labeled, food-grade containers with tight lids. The working-container label is the common name of the food.

Do not store dry food under leaking pipes, under stairs, or in a mechanical room. Do not use the dry store as overflow for dirty linens, mops, or chemical jugs.

Frozen Storage

Frozen food is kept frozen solid. Soft edges, ice crystals that signal thaw-and-refreeze, and water-stained cases are receiving rejects; the same signs in the house freezer mean the unit failed or was left open. Do not overload the freezer. Blocked vents and stuffed door shelves create warm pockets.

Do not refreeze thawed TCS food unless it has been cooked. Thawed raw chicken that sat in the walk-in is not going back into the freezer as raw chicken. If it is cooked to the correct temperature, the cooked product may then be cooled and frozen as a cooked leftover under date-marking rules. Ice cream that thawed to soup is discarded, not refrozen.

FIFO applies in the freezer. Date marks on RTE TCS that is frozen still matter: the clock paused in the freezer and resumes at thaw. A freezer is not a place to hide product that already expired in the cooler.

Chemicals: Separate, Below, Labeled

Poisonous or toxic materials are stored so they cannot contaminate food, equipment, utensils, linens, or single-use items. That means a designated cabinet or area, physically separate from food. If chemicals and food must share a room, chemicals stay below food, never above it. A sanitizer jug on the top shelf of the dry store over flour and sugar is the classic fail.

Keep chemicals in original labeled containers. If a working spray bottle is needed, it is labeled with the common name of the material. Do not pour degreaser into an empty pickle bucket, and do not put flour into a bucket that used to hold sanitizer, unless the container has been properly cleaned and relabeled for the new use. The safer exam answer is original containers for chemicals and food-grade containers for food. Never store pesticide, fuel, or maintenance chemicals with food.

Scenario: Sanitizer on the Top Shelf

A new stocker puts a case of quat sanitizer on the highest dry-store shelf because "liquids belong up top so they do not get wet on the floor." Below the case are open-top bins of flour and sugar. The PIC moves the sanitizer to the designated chemical cabinet, below and away from food, and inspects the flour and sugar for splash. If the jugs leaked, the food is discarded. Height does not make a chemical safe. Below food, never above is the rule.

Linens and Single-Use Items

Dirty linen (soiled aprons, wiping cloths, bar towels) is stored so it cannot touch food, clean equipment, or clean linen. A laundry bag on the prep table is a fail. Clean linen is stored in a clean, dry location, off the floor, away from splash.

Single-use items — cups, lids, straws, clamshells, disposable gloves, parchment — are stored to prevent contamination, at least 6 inches off the floor, in original packaging or in covered, clean containers. A sleeve of foam cups standing on the kitchen floor next to the mop bucket is not protected storage. Do not reuse single-use items.

Exam Traps

The trap is quoting 50°F–70°F as if it were a Food Code legal limit like 41°F. Call it an operational range; the Code language is cool, dry, and ventilated. Another trap is refreezing thawed TCS "because it was only out for a little while." Unless it was cooked, it is not going back frozen as raw TCS. A third is storing sanitizer above food because the jugs are sealed. Sealed containers leak. A fourth is using a food bucket for chemicals without cleaning and relabeling — or assuming a rinse is enough. The exam wants original labels and separation.
