Cross-contact is residue, not a pathogen story
Cross-contact happens when allergen residue is transferred onto a food that should not contain that allergen. Gloves that are not changed after handling a sesame bun will print that sesame onto the next plate. Steam and splatter from a fish sauté or a shrimp fajita can land on a neighboring “no-seafood” order. Shared condiment caddies — one mayo knife, one butter crock, one squeeze bottle everyone tops off — turn a single allergen into a station-wide problem. Bulk bins of granola, flour, or topping mixes get one scoop that just left the peanut bin.
Controls that actually work
The control set is operational, not rhetorical.
Dedicated equipment is the cleanest answer when volume justifies it: a fryer that never sees shrimp, a toaster that never sees sesame buns, a color-coded knife and board that only build allergen-free tickets. The correct move is to wash, rinse, and sanitize the flattop and utensils — or move the ticket to a clean, dedicated surface — change gloves, wash hands, and build the order so steam from the shrimp pan cannot hit it. If you cannot do that during the rush, you do not sell the allergen-free promise. You do not tell the guest that “the heat kills the shrimp protein.”
