Why the Flow Matters More Than a Single Station

Storage must keep those sources from dripping or splashing onto RTE food. Prep is the highest-risk indoor transfer: boards, knives, slicers, hands, and gloves. Cooking can kill many pathogens on the food being cooked, but it does not sterilize the station. Holding, cooling, reheating, and service re-expose food to utensils, steam-table pans, ice, and hands.

The Saturday Chicken-and-Salad Failure

A prep cook portions raw chicken on the center table. Juice runs to the table edge and into a hotel pan of cut romaine parked "just for a minute." The cook wipes the table with a dry towel, keeps the same gloves, and tosses the romaine with dressing. The chicken will be cooked. The salad will not. The drip is a complete contamination event. The control is not a better cook temperature. The control is a workflow that never lets raw chicken occupy the same surface, time, or drip path as salad.

Controls That Stop Transfer

Separate equipment. Color-coded boards and knives are the usual teaching picture: red for raw meat, yellow for raw poultry, green for produce, white or tan for RTE, blue for seafood. Color only works if staff actually honor the code and if a soiled "green" board is not used as a spare. Separate slicers, tongs, scoops, and prep sinks matter as much as boards.

Separate space or separate time. Ideal: raw animal prep and RTE prep happen in different rooms or on different tables. Common reality: one table. Then time becomes the control. Prep RTE first while the table is still clean, wrap and refrigerate that food, then break down raw poultry. After raw work, clean and sanitize the table, boards, and utensils before any RTE food returns. Never prep raw chicken and salad at the same moment on the same surface "to save a trip."

Clean and sanitize between tasks. A rinse is not a clean. A dry wipe is not a sanitize. Remove soil, then apply an approved sanitizer at the correct concentration and contact time. Do this between raw and RTE, between species when the operation's program requires it, and anytime a tool is soiled.

Store raw below RTE. In coolers, put packaged RTE food and produce on upper shelves. Put raw seafood, whole cuts, ground meats, and poultry on lower shelves in that exam order so juices drip down, not up. Never store raw chicken over potato salad, garnishes, or iced tea. Cover food. Do not use a leaking case as a weight on a ready-to-eat pan.

Wash hands and change gloves when switching from raw to RTE. Gloves that portioned chicken are contaminated equipment you happen to be wearing. Remove them, wash, and put on a new pair before you touch a bun, a garnish, or a plate.

Treat ice as a food. Ice that will be consumed, or that will touch food, is food. It needs a clean bin, a food-grade scoop stored outside the ice, and hands or bottles that do not go into the ice. Ice used to chill a bottled drink is not automatically clean enough to scoop into a water glass. Ice that held raw fish is not a coolant you later dump onto produce or into a beverage well.

Color Codes Only Work If the Board Is Actually Clean

A kitchen buys a full color-coded set and then uses the green produce board for chicken "because the red board is in the dish pit." Color is a memory aid, not a sanitizer. If the designated board is missing, stop and get a clean, sanitized board. Do not invent a substitute from a soiled stack.

Ice Bin at the Bar

A bartender buries a soda gun and a bottle neck in the ice, then scoops that ice into a cocktail. The bottle exterior and the gun have been on the bar, on dirty hands, and in guest space. That ice is now a vehicle. Keep ice covered, use a scoop stored outside the product, never store bottles in the ice, and treat the bin as a food container.

Exam Traps

  • Cooking the chicken does not clean the salad. If raw juices already reached RTE food, the salad is contaminated.
  • A flipped board is still one soiled tool. The unused face shares edges, hands, and the table.
