1In a meat plant's HACCP plan, what is a critical control point (CCP)?
A.Any step where a written record is kept
B.A step where the product is weighed and labeled
C.A step where control is essential to prevent, eliminate or reduce a hazard
D.The final inspection of the finished product carried out by the buying client
Explanation: A CCP is a step at which control is essential to prevent, eliminate or reduce a food-safety hazard to an acceptable level, for example carcass chilling or a lethal cooking step. Each CCP has critical limits, monitoring, corrective actions and verification.
2What is the first of the seven HACCP principles?
A.Conduct a hazard analysis
B.Establish record keeping
C.Set critical limits
D.Establish verification procedures
Explanation: The seven principles are: conduct a hazard analysis, determine CCPs, set critical limits, establish monitoring, set corrective actions, establish verification and keep records. Everything else depends on identifying the hazards first.
3What is the main purpose of ante-mortem inspection in a Tipo Inspección Federal (TIF) slaughterhouse?
A.To grade carcass quality for price
B.To certify the live weight of each animal for payment to the owner
C.To measure the pH of the meat before it is chilled
D.To detect sick, injured or suspect animals before slaughter
Explanation: Ante-mortem inspection examines animals at rest and in motion to find signs of disease, injury, neurological disorders or drug residues risk, so that suspect animals are segregated, slaughtered separately or condemned.
4Clenbuterol residues in beef or liver have caused poisoning outbreaks in Mexico. Why is its use in livestock prohibited?
A.It is an antibiotic whose use selects for resistant bacteria in the herd
B.It reduces carcass yield
C.Its beta-agonist residues cause tachycardia and tremors in people
D.It is an anthelmintic toxic to the liver
Explanation: Clenbuterol is a beta-2 adrenergic agonist misused as a repartitioning agent to increase lean meat. Its residues, especially in liver, cause tachycardia, tremors, headache and palpitations in people, so its use in food animals is banned.
5A dairy cow treated with an antibiotic for mastitis must not have her milk sold for a set period. What is this period called?
A.Incubation period
B.Withdrawal (withholding) period
C.Dry period
D.Voluntary waiting period
Explanation: The withdrawal period is the minimum time between the last dose and the moment milk, meat or eggs can enter the food chain, so residues fall below the maximum limits. It is set for each product and species on the label.
6A cooperative's dairy plant heats milk in a continuous plate heat exchanger before bottling. Which minimum heating standard does this continuous (HTST) process apply?
A.63 °C for 15 seconds
B.72 °C for 15 seconds
C.100 °C for 30 minutes
D.135 °C for 30 minutes
Explanation: HTST pasteurization heats milk to at least 72 °C for 15 seconds, followed by rapid cooling. The slow (batch) method uses 63 °C for 30 minutes, and UHT uses about 135 to 150 °C for a few seconds.
7How do people acquire Taenia solium neurocysticercosis?
A.By eating undercooked pork containing cysticerci
B.Through the bite of an infected mosquito
C.By ingesting T. solium eggs from human feces
D.By inhaling dust from pig pens
Explanation: Eating undercooked pork with cysticerci causes intestinal taeniasis. Cysticercosis, including neurocysticercosis, occurs when people ingest eggs shed by a tapeworm carrier, through fecal-oral contamination. Control requires sanitation, meat inspection and treating carriers.
8In trichinellosis inspection of pork, which muscle is preferred for sampling?
A.The pillars (crura) of the diaphragm
B.The longissimus dorsi
C.The heart
D.The semitendinosus
Explanation: Trichinella larvae concentrate in highly active, well-oxygenated striated muscles; the diaphragm pillars are the predilection site used for artificial digestion testing.
9Why must carcasses be chilled quickly after dressing?
A.To increase carcass weight
B.To speed up rigor mortis and tenderize the meat faster
C.To limit growth of pathogenic and spoilage bacteria
D.To raise the final meat pH
Explanation: Rapid chilling keeps the carcass surface and deep muscle out of the temperature range in which pathogens such as Salmonella and spoilage organisms multiply. It is a critical control point in most meat HACCP plans.
10Under NOM-033-SAG/ZOO-2014, where is the penetrating captive bolt placed to stun an adult bovine?
A.Behind the poll, over the atlanto-occipital joint of the neck
B.On the side of the head behind the ear
C.Between the nostrils
D.Where lines from each eye to the opposite horn base cross
Explanation: For cattle, the frontal site is where imaginary lines drawn from each eye to the base of the opposite horn (or ear) intersect, directing the bolt toward the brain stem. Correct placement produces immediate unconsciousness.

EGEL Plus MVZ: Suggested Study Strategy

1Review HACCP principles, ante-mortem and post-mortem inspection, humane slaughter under NOM-033-SAG/ZOO-2014, meat pH defects (PSE and DFD) and milk hygiene, including pasteurization and somatic cell counts.
2Study the national campaigns against bovine tuberculosis (NOM-031-ZOO-1995), brucellosis (NOM-041-ZOO-1995) and paralytic bovine rabies, plus prevalence, incidence and outbreak-investigation steps.
3Practice production calculations: feed conversion, break-even volume, depreciation and reproductive indicators such as calving interval, and review ration basics (NDF, RUP, urea, DCAD).
4Drill clinical cases by species: parvovirus, urethral obstruction, ehrlichiosis, milk fever, ketosis, displaced abomasum, bloat, strangles and colic, including first-line treatments and antidotes.
5Review surgical principles: asepsis, regional anesthesia in cattle, anesthetic monitoring, suture patterns, gastropexy and wound management, and practice Spanish reading and indirect writing for the transversal section, which this bank does not cover.

A non-programmable scientific calculator is allowed, and it cannot be shared. The exam is given on paper or online at an institutional site, or remotely through Examen desde casa. In 2026 the individual Examen desde casa costs MXN 1,885.

Why is this practice bank in English if the official exam is in Spanish?

The official Ceneval exam is in Spanish. This bank is an independent English-language study adaptation with four-option questions, not an official translation or format simulation, so you can review the veterinary content. Mexican names such as NOM and Tipo Inspección Federal (TIF) are kept in Spanish so they match your references. The bank covers the disciplinary areas only.
