Standardized Recipes (B-7.01)

A standardized recipe is a tested formula the kitchen agrees to follow. It typically includes:

  • Ingredient list with weights preferred over vague volume measures for solids
  • Yield (total weight or number of portions) and portion size
  • Step-by-step method and critical temperatures or times
  • Equipment notes (pan size, mixer attachment)
  • Plating diagram or description and garnish
  • Allergen flags and holding instructions

Canadian kitchens and Red Seal items favour grams and kilograms for solids and millilitres and litres for liquids. If a recipe lists cups, convert carefully or prefer a weight-based standard when you rewrite house recipes.
