Red Winemaking: Extraction Timeline

Pre-Ferment Extraction

Used for some Pinot Noir and fruit-forward reds. Requires hygiene and SO2/temperature control to avoid spoilage.

During Fermentation Extraction

Warmer ferment temperatures increase extraction and risk cooked flavours if too hot. Cap management frequency is a quality lever: too little → weak colour/reduction under the cap; too much aggressive work → bitter seed tannin.

Post-Ferment Maceration

After AF, some premium reds remain on skins for extra days to polymerise tannins and deepen structure. Extended maceration needs healthy fruit; rotten or underripe lots become bitter or dirty. High-volume reds are often pressed sooner to free tanks and avoid hard tannins from average fruit.

Pressing Reds

Rosé Winemaking

Rosé colour comes from limited red-grape skin contact (or rarely blending).

Direct Press (Vin de Presse)

Short Maceration (Saignée-Related Paths)

Sweet Winemaking Methods

Residual sugar can be achieved in three Level 3 frameworks:

1. Interrupt Fermentation

Stop AF before sugar is exhausted by chilling, fortifying with spirit (mutage — fortified sweets), or adding SO2 and removing yeast (filtration). Examples conceptually: some German/off-dry styles stopped to retain sugar; fortified Muscats and Port-style mutage. Interruption preserves grape sweetness and flavour but needs stability control so refermentation does not occur in bottle.

2. Add a Sweetening Component
